Which has more flavours, Baskin Robbins ice creams or Korean kimchi?
While ice-cream is usually consumed after a meal, kimchi is eaten as an appetizer. The cook offers a variety of assorted dishes at the beginning of each meal for everyone to sample. No matter how small the portion the variety is a must. Each appetizer plate consists of one of the several varieties (36?) of kimchi. Kimchi is fermented vegetables, salted seafood, fish or meat. The post popular is cabbage. Some like it hot!
This kitchen was not prepared for our cameras...this is the way they always look. Restaurants need to be this organized because food is delivered promptly and at once to very large crowds. We marveled at the service.

This is the place where the great variety of vegetables is chopped, diced and made ready for the cooks..

Once the items are readied they are arranged for easy assembly.
 
Although we often ate with the gas grills built into the table the waitresses almost always preferred to cook for us. We loved the grilled beef called bulgogi (thinly sliced and seasoned beef). Wrap a few pieces in the Ssam (green leaves) add some rice, spices, wrap like a present and eat in one mouthful... if you can.
Rice is not considered a side dish (as is Kimchi) it is part of the main dish. We learned that rice is not eaten with a chopstick... Chopsticks are used for picking up food and placing it either in the Ssam or in the rice bowl...a spoon is used to eat the rice, whew!
These wonderful ladies were our cooks and waitresses for several meals during our journey.
