Hook and Cleaver a natural fit

for Skaneateles village

Hook and Cleaver aims to offer Skaneateles more than a traditional butcher shop.  The shop, which opened in September, offers organic, free-range and all-natural meats along with wild caught fish and shellfish. 

Executive chef and co-owner Chris Brown explained the shop’s philosophy at the December 11 meeting.  Chris, a chef for the past 13 years locally and in Connecticut and Massachusetts opened the store with Matthew Maggio, a friend he met in church.

All of the meat sold at Hook and Cleaver is 100% free range, grass fed from the Maverick Ranch in Montana.  Grain fed meat is not good for you, Chris explained and accounts for many of the problems that have surfaced with meat products in the past few years, including e-coli and mad cow disease.

There is a difference between all natural, free range and organic meat, he said.  To be USDA certified organic, it must come from animals that have never been administered antibiotics or hormones, must be fed 100% certified organic feed or grass and be free of animal byproducts, among other requirements.  If the animals are kept in a fenced in pen, the fenceposts must be organic, he said.  The meat must also be butchered on site, not in a butcher shop such as his. 

The meat has significantly less fat and is thus much better for you than most of the meat available on the market today.

The shop also features a wide selection of wild caught fish and shellfish.  Farm-raised fish are raised in a small net with nowhere to go, Chris said.  If the net is not moved, the fish end up being raised in what can be unsanitary water.  Hook and Cleaver offers organic salmon from Scotland and Norway that is raised several miles out in the ocean away from polluted waters.

In addition to local customers, Hook and Cleaver is also supplying fish for sushi restaurants in Syracuse.  While none of the products it serves are local, Chris said he and his partner are exploring ways to offer locally raised organic product.

Hook and Cleaver has enjoyed getting to know the community and looks forward to many years in its 19 Fennell Street location

 

Beware of new e-mail scams that target Rotarians

There are several e-mail scams that target Rotarians.  Rotary International warns Rotarians to be aware of the following scams:

v An e-mail from “UFAAIDS” requesting personal information in exchange for a job position as a “U.S. UFAAIDS-Rotary District 8080-Donations Co-ordinator.”

v A request via e-mail for a $5 donation to list your Interact club on a Web site. This Web site is not affiliated or in any way associated to Rotary International.

v An e-mail that claims that a Rotarian has “emerged a recipient of our Rotary International improvement Grant Programs.” It goes on to say that the recipient was selected from an “exclusive” database of more than 800 million individuals and corporate bodies. The e-mail then gives a fake a batch number and contact information for a “cash prize.”

v Another scam e-mail claims that a deceased Rotarian has left money to the e-mail recipient to be donated to philanthropic efforts. The sender, who claims to be the executor of the will, then asks for the recipient’s personal information in order to claim the inheritance. 

v Another e-mail scam from a fake Rotary club claims that the recipient won a sum of US$ 700,000. The e-mail states that the winnings can’t be transferred in the recipient’s home country and that they must share an active bank account for deposit of “cash prize.”

Rotary International does not solicit funds through e-mail, nor does it ask that personal information be updated by e-mail or other electronic means. RI encourages Rotarians and Rotary clubs to avoid becoming victims of such scams by deleting any e-mail that appears suspicious.
