Ingredients
- 1 head Garlic, whole, unpeeled
- Salt, sprinkle
- Pepper, sprinkle
- Oregano, sprinkle
- 2 tablespoons Oil, Olive
Directions
Preheat oven to 350 degrees. 1 head garlic, whole, unpealed - slice off the very top of this to expose most of the cloves. Double a layer of aluminum foil (6x6), place garlic head in middle & bring the sides up to form a cup. Drizzle about 2 tbsp. olive and - if you wish - a sprinkling of salt & pepper and oregano. Bring the sides all the way up and twist together to seal it firmly. Place in oven and roast for about 40 minutes - until soft and golden. Open the top so garlic stops cooking. Set aside until cool enough to handle. Squeeze cloves out of their skin and throw skins away. Mash with a fork.
