"Salmon with Cold Udon and Creamy Mayo"
I had this idea from my roommate Motoko-san in New York City. However, her recipe is pretty simple with canned tuna mixed with Mayonnaise. So, I changed from canned tuna to canned salmon and added sour cream and Japanese dressing. Chopped lettuce and seaweed (Wakame) are the topping for this dish. I also had extra fried shrimps, see above photo.

The last Saturday nite, I went to a nice sushi bar in Onomichi with a couple of friends, about 50 miles west of Hiroshima City. This town has been good for artists, like a writer Fumiko Hayashi and a movie director Nobuhiko Ohbayashi's birth place. I could have said Onomichi is the most cultivated town in Hiroshima prefecture.
"Kurazuzhi" the sushi bar has so pure and simple dishes like the one in the top picture. I thought because of the young chef/owner is simple and pure. One of the friends brought a bubbled sake, sake-champaign. I never had this type sake, but it was soooooooooo gooooood! The name of the sake is "Orikarami Hakubi"
