The Story
It's an established fact that commercial bread-baking in the US pretty much stinks. It's one of the things that English visitors to the US always comment on [that and the fact that y'all always serve your tea cold]! When I began spending long periods in Florida, I began to miss decent bread. Bad. Then, one day, Tony turned up with a bread maker. It was his way of saying <stop complaining and do something about it> ...
So, I did. And I did.
The Machine
It's an Oster bread maker. The 1 1/2lb bucket weighs a tonne. In fact the whole thing is darned sturdy. It's simple to use and not impossible to clean. I kinda like it. We bought a toaster to match :0)
The Approach
I saw little point in having a bread maker and just using the mixes you pay over-the-odds for in the supermarkets. Anyway, I was trying to get away from the soft, spongy, sweet stuff they call bread. I wanted crusty, robust, delicious bread that I would want to eat. I developed and perfected these recipies over four years, and am sharing them for the first time here.
Question Me
Breadmaking is not an exact science. It's different for everyone. By all means use these recipes, but also question them. Tweak them. Add different fruits, different seeds, try new flours. Let me know how things turn out!
