
CREAMED SPINACH
Procedure
(and wonderful it is, too. Even if you don't like spinach)
2 pkgs. (10 oz. ea.) frozen chopped spinach
1/4 lb. fresh mushrooms
1/4 C butter or margerine
2 C prepared Ranch dressing (original)
1/2 C grated parmesan cheese
1 can (14 oz.) quartered artichoke hearts or bottoms
Preheat oven to 350.
Cook spinach according to package directions; drain thoroughly, squeezing out excess liquid. In a skillet, saute mushrooms in butter 'till soft, about 5 minutes. In a large bowl, whisk together salad dressing and cheese; stir in spinach, mushrooms and artichoke hearts. Pour mixture into a lightly buttered 2-quart casserole. Cover and bake 'till heated through, 20 - 30 minutes.
