
Chicken or Turkey Noodle Soup
Ingredients
2 Tbs. Olive or veg. oil
2 Cloves Garlic, finely chopped
1 Med. Carrot, sliced
2 Med. Green onion, chopped
2 Cups Cubed cooked chicken or turkey
1 Cup 2 inch pieces of uncooked spaghetti (or other pasta)
1 Tbs. Chopped fresh parsley or,
1 tsp. dried parsley flakes
½ Tsp. Ground nutmeg
¼ Tsp. Pepper
1 Each Bay leaf
3 cans 15 ounce or 42-45 ounce can chicken broth
Procedure
Heat oil in 3 qt. saucepan or Dutch oven. Stirring
occasionally cook garlic, onions and carrots in oil about 4
minutes or until carrots are crisp-tender. Stir in remaining
ingredients. Heat to boiling, reduce heat. Cover and simmer about
15 minutes. Stir occasionally until pasta is tender. Remove bay
leaf.

This is a quick and fast recipe for home made Chicken Noodle
soup. It's a great way to use Thanksgiving leftovers!
