Easy Chicken Soup
Procedure
Dump about 2 quarts of Swanson's fat free chicken broth in a crock pot Add a truck load of vegetables Add 4 skinless diced raw chicken breasts Add jalapenos to suit yourself Cook it for about 4 or 5 hours on "high" (or all day on "low") Before you serve it, add cooked steamed rice or serve over Chinese noodles (my favorite)*
*If you expect to have left overs, just use enough noodles for that night.
Otherwise, they become gummy. I cook the noodles and put them in bowls. Then I pour the soup over the noodles. Yummy! When I reheat the leftovers, I cook fresh noodles. Chinese noodles only take 3-4 minutes to boil. You can find fresh ones in small packages in the veggie section at Safeway. Or, you can buy dried noodles in the "International" section. The fresh ones are fabulous! They usually come in either "wide" or "thin" varieties. The thin are best for soup. I use wide ones when I do stir fry---they're better than rice :)
