
Bran Muffins
Good Muffins
Ingredients
| Quantity | Description |
| 1 cup | Whole wheat or white flour (I like a 50/50 mix) |
| 1 cup | Unprocessed Bran |
| 2.5 tsp | Baking Powder |
| .5 tsp | Baking Soda |
| .5 tsp | Salt |
| 1/2 cup | Raisins |
| 1/4 cup | honey (or sugar) |
| 1 | Egg |
| .66 cup | Buttermilk |
| .25 cup | Oil |
| .25 cup | Molasses |
Procedure
Preheat oven to 400 degrees (F.)
Combine dry ingredients in larger bowl and mix well.
Combine oil, egg and milk together and mix well.
Stir wet ingredients into dry ingredients until just blended.
Fill greased or paper lined muffin pans 2/3 full
Bake 20 minutes or until done. Makes 12 muffins.
History
This recipe is a family favorite. I found it when I was a single
parent and looking for a nutritious quick breakfast food for my family. In
Patterson I used to make muffins each week and the neighbors would come over to
eat them. They called me the muffin man.
