
Cheesy Lasagna
This makes 1.3 Lasagnas. Have a party and freeze the small one for later use!
Ingredients
| Quantity | Description |
| 3 lbs. | Mix of good grade hamburger and Turkey Italian Sausage |
| 1 ea. | Medium Onion, chopped |
| 12-16oz | Fresh Mushrooms, sliced |
| 2 cloves | Two cloves of garlic or two teaspoons of crushed garlic |
| 1 ea. | 5 lb. Mozzarella in a bucket like you get at Costco, grated |
| .75 lb. | Jack Cheese, grated |
| 1.25 lb. | Cheddar Cheese or Longhorn, grated |
| 1 | Box of Wide Lasagna Noodles |
| 75 ounces or 3 jars | 3x 25 ounce (or 1lb. 9 oz) Jars of Good Marinara
Sauce. I like the Sutter Home Pasta Sauce with White Zinfandel wine. |
Two pans, a large one (10x12) and a small one (9x9)
Procedure
Boil water and cook noodles as directed.
Meanwhile, cook chopped onions in a tab of butter until they are translucent, then set them aside.
Fry the meat in a very large skillet or a medium sized Dutch oven. Drain the fat then add the garlic and fry just a bit more.
Add and stir in a little pepper, the onions and the mushrooms.
Then, add about 2.5 of the jars (62 ounces) of Marinara Sauce. Save the last half of a jar.
Let sauce simmer a bit. Stir every now and then.
Spray Pam in the two pans and cool noodles so they can be handled.
Layer noodles, meat, sauce cheese (repeat, until both pans full), top with cheese!
Finish by spreading last of sauce on tops of each lasagna and spread with a spatula.
Cook lasagnas about 25 min each at 350 degrees, check to see if bubbling before removing from oven.
Let sit for at least 10-15 minutes to give the cheese a chance to thicken so it's not like soup when you serve it.
Serving Suggestions
Really good served with a decent red wine, like Cabernet or Merlot, and some good bread like Colombo Extra Sour Dough French bread or better yet, Il Fornaio Olive Loaf.
History
This recipe evolved from a recipe given to me by my friend and former Patterson neighbor, Maria. This dish was served in November 1998 when Lura, Floyd, Jerry, Dianne, Steve and Jeff had dinner with Sue, Ken and I at our house.
