CORN PUDDING

Procedure

5 extra large eggs, not seperated

1 1/2 Tbsp. flour

1 Tbsp baking powder

1/2 C sugar

2 Tbsp. melted butter

4 C milk

2 - 15 1/2 oz. cans whole kernel corn, drained.

 

Oven 400.

Lightly butter a 9 x 13 baking dish.

In a large mixing bowl beat eggs on high 'till thickened enough to foam soft peaks, about 5 minutes. Add flour, baking powder and sugar and continue to beat for 3 minutes longer. Add melted butter and beat one minute. Add milk and drained corn and mix well. Pour mixture into the prepared dish. Set the dish in a hot water bath and bake for 1 - 1 1/4 hours. Test by inserting a clean knife into the center of the pudding. When it comes out clean, the pudding is done. Yummy!
