Pork Tenderloin - A Quick Meal

My wife brought home a bag of pork
tenderloins and I picked the smallest one ($3.78 total), poured
on a touch of Italian dressing and wrapped with 3 strips of bacon
using toothpicks to hold in place. Fired the egg up to about
325° with two small pieces of oak thrown in at the last moment.
Placed tenderloin on egg using indirect fire brick technique
with drip pan for about 45 mins. Pulled meat off at 140°
internal reading, wrapped in foil and let set for about 10 mins.
Sliced and served a nice medium rare cut of finely smoked pork
tenderloin. The total time invested in meal was about an hour
and a half and the result was timeless.

Egg has become my favorite meal as of late. It is cheap, fast
and most delectable.

A fine cut of meat as any piece
of prime beef.
