Cornish Game Hens

This night we had "Cornish Game Hens". I usually call them "little chickens" because I doubt they were born anywhere near Cornwall. However "Cornish Game Hen" has a certain Celtic sophistication to it so on special occasions we will refer to them with their more distinctive moniker.

I gave them my usual dose of Italian dressing and a liberal twist of fresh ground black pepper. I sometimes will wrap them in bacon however tonight I decided to forgo that ritual and I was very glad I did. I fired the egg up to about 350° and tossed them on. The temperature rose a bit to maybe 400° during the cook. I checked them at about an hour and decided to pull them as they looked quite done.

I was correct in my assessment of the situation as they were perfect!

 

As you can see the color was fantastic. Had I wrapped in bacon the delicious mahogany hue would never have been achieved. And the taste was superb! Another victory for the illustrious green egg.
