Yummy Carrots

 

 

Ginger ale is the secret ingredient in this easy dish.

 

 

1 lb carrots, sliced

1/2 cup or so of ginger ale (not diet)

2 Tbsp butter

salt

 

Place carrots in a medium saucepan with the ginger ale. The ginger ale should just barely come up to the top of the carrots (depending on the size and shape of your saucepan, you may need to add more ginger ale). Simmer over medium heat until carrots are tender. The liquid should be almost evaporated. If the liquid evaporates before the carrots are tender, add more ginger ale. Stir in butter, season with salt and serve immediately.
