French country winter Vegetable Soup

 

1 Red Onion

3 cloves Garlic

1 Leek, split

1 Carrot

2 Large Potato

2 Stalks Celery

1/4 small head green Cabbage

4 Fresh Mushrooms,

3 ripe tomatoes

1 Parsnip

1 Kohlrabi

1 Turnip

1 Rutabaga

1/2-1 cup of Parsley

 I tsp. Caraway seeds,

1/2 cup fresh BASIL

3 BAY Leaves

2 teaspoons Herbs de Province,   optional,

 

Any other combination of vegetables, leftover cooked vegetables can be used,  Broccoli, cauliflower, etc., etc..

1 can Health Valley Chicken Broth

Add water to cover vegetables (a few cups)

 

SautŽ sliced onion in water,

Add all cut up ingredients, spices and liquid

Bring to a boil, then simmer till veggies are tender.

 

Sometimes I add Chickenbreast, and an other can of Health Valley Chicken Broth

and less water to vary the taste
