CABBAGE SOUFFLE PUDDING

 

Taste like Noodle Pudding

 

 

3 lbs green cabbage

1 tblsp  mild soy sauce

3 apples, coarsly chopped

1cup seeded muscat raisins

2/3 cup fresh hot orange juice

1 tblsp lemon juice

1/4 cup frozen apple juice concentrate

1/3 cup chicken stock

1/2 cup matzo meal

1 tsp cinnamon

8 egg-whites

1/8 tsp cream of tarter

 

Shred cabbage like wide noodles

Cover with boiling water, add soy sauce and bring to boil.

 

 Simmer until tender, about 20-25 minutes

Drain well and spread out to dry

 

Squeeze by handfuls and place in a large mixing bowl

Add apples, raisins, orange, lemon,  apple juice and chicken stock to cabbage and mix gently


Sprinkle Matzo meal, cinnamon over mixture and turn into a 2-quart rectangular casserole that has been treated with nonstick spray.

 

Sprinkle lightly with cinnamon and freshly ground nutmeg and bake 1 hour in a preheated 350 degrees oven
