French country winter Vegetable Soup

 

1 Red Onion

3 cloves Garlic

1 Tblspoon shalllot

I Leek, split

1 Carrot

I Large Potatoe

2 Stalks Celery

1/4 small head green Cabbage

4 Fresh Mushrooms,

3 ripe tpmatoes

1 Parsnip

1 Kohlraby

1 Turnip

1 Rutabaga

1 mall celeriac

1/2 Fennel bulb

 

All above ingredients should be minced.

1/2 cup fresh BASIL

3 BAY Leavers

2 teaspoons Herbs  deProvince

Any minced leftover cooked vegetables, stock or defatted Gravy

4 Cubs chicken stock

4 cubs Water

á      1.Use little chicken stock, add minced onions, garlic,     shallot & leek, sauteÕ til transparent

á      2. Add remaining veggies and cok 5 min

á      3. Add chicken stock & Water, cook until tender, (30 min)

á      4. If finer texture is required, purree in Blender

á      For spicier soup, add 4ounce tomato paste and curry powder
