FRENCH BREAD PUDDING

 

2-15 very  thin slices from skinny loaf of French bread, preferably whole grain

2 unpeeled apples, thinly sliced

1/2 cup golden raisins

3 cups none-fat milk

6-8 eggwhites

1/2 cup rum

1 tblsp vanilla

2 tblspn honey [or fructose]

salt [optional]

 

In nonstick pie pan, sprayed with cooking speay, arrange bread rounds and apples slices in overlapping circles.  Sprinkle with raisins.

Beat together remaining ingredients, and pour over bread and fruit.

Cover pan with foil.

Bake in pre-heated 300-degree oven for 1+1/4 hours                                 .

Uncover pan, raise temperature to 400 degrees.

Bake 15 to 20 minutes more, until top is crisp

Serve warm or chilled

 

Makes 8 servings, 185 calories each, 169 calories with egg substitute
