Chicken Divan
Serves 6. 10 WW points per
serving.Ingredients1
bunch broccoli 1/4 cup butter
5 Tbsp all-purpose flour
2 cup chicken broth
1/2 cup heavy whipping cream
3 Tbsp dry sherry
1 Tbsp fresh lemon juice
1/2 cup grated Parmesan cheese
1 1/2 pound cooked, skinless chicken
breast(s)
InstructionsCook
broccoli (I do it this way
).Make roux (melt butter, add
flour, cook over medium low heat for a few minutes). Add broth, stir and simmer
until thickened.Whip cream
until it holds stiff peaks. Fold it, sherry, and lemon juice into the sauce,
season with salt and
pepper.Arrange broccoli in
baking dish. Pour half the sauce over it. Stir half the Parmesan into the
remaining sauce. Place chicken on top of broccoli, pour remaining sauce over
chicken, top with remainder of Parmesan. Broil for 1 minute, until sauce is
golden and bubbling.From
