Hush Puppies
1-1/2 cups
cornmeal
1/2 cup all purpose
flour
1 TBS baking
powder
1/8 tsp baking
soda
1 tsp
salt
fresh ground black
pepper
1 TBS
sugar
1/2 medium onion,
chopped
1 cup
buttermilk
1
egg
1 jalapeno pepper, seeded and
chopped
3 TBS fresh chives,
chopped
Combine dry
ingredients in bowl. Add egg and buttermilk, stir until moist. Cook by dropping
teaspoons of batter into oil heated to 350 degrees. Cook to golden brown,
turning once. Remove and drain on paper towels. Potential dipping sauces
include jalapeno jelly, or
aioli.
Makes about 36 hush
puppies.
