Meat Loaf: My Favorite Recipe
2 pounds ground
beef
1 pound ground pork or
sausage
2 garlic cloves, finely
chopped
1 large onion, finely
chopped
1-1/2 tsp
salt
1 tsp
pepper
1 tsp
thyme
1 tsp summer
savory
1/2 cup
breadcrumbs
2 eggs, lightly
beaten
Thoroughly blend
everything but the eggs. Then, add the eggs and blend again. Form the meat into
a loaf, and place in a glass baking dish. Bake at 350 degrees until the center
is 150 degrees, about 60 to 90
minutes.

I am reminded of Tom
Bodett, who talked about his secret strategy for getting his hands clean after
working on his car's engine: make a meat loaf. He said the ladies at the church
potluck never did figure out his secret ingredient.
