Better Than Average French Toast
6 large
eggs
2 TBS orange
juice
1/4 cup
milk
1/2 tsp
cinnamon
1/2 tsp vanilla
extract
salt to
preference
approx. 8 slices of
bread -- your mileage may vary. Day old bread may even work better than fresh,
softens up nicely but doesn't get
soggy.
3 tablespoons butter for
frying
Accompaniments:
warm
maple syrup
confectioners' sugar for
dusting
Optional -- may
substitute dark rum for orange
juice

In
large shallow baking dish, whisk together eggs, orange juice (or rum), vanilla
extract, cinnamon, salt. Dip bread in this mixture, and sauté in butter
over moderate heat until a delicate brown on both sides. Serve hot, I prefer
warm maple syrup, but some prefer confectioners
sugar.
If you want to stretch
the recipe a bit, you can add more milk or more orange juice, but as you
increase the added liquid there is a greater chance that the French Toast will
be a bit soggy.
