Chicken Satay
1 clove garlic, minced or
pressed
2 TBS soy
sauce
1 TBS salad
oil
1 tsp ground
cumin
1 tsp ground
coriander
2 chicken
breasts, boned, skinned, and cut in
strips
Combine garlic,
soy, oil, and spices to make
marinade.
Place chicken
breasts in glass baking dish. Add marinade, stir to coat evenly. Cover and
refrigerate for 1-1/2 to 2
hours.
Soak bamboo skewers
in water. Thread chicken strips onto skewers. Cook over
grill.
This can be even
better if served with rice and peanut sauce.
