Restaurants
Probably the greatest use of disposable chopsticks is in restaurants, which can go through hundreds or thousands of them every day. The volume of waste makes the issues that much more impressive; you can see the empty boxes behind restaurants, printed with "Product of China" or "Product of Canada," and you can see those aspen forests going under. And then you can look at the restaurant trash barrels, and see all those trees heading for the dump. We need to encourage restaurants to stop using disposable chopsticks. One of the reasons for setting up the Chopstick Project is to provide restaurants with reuseable chopsticks and informational materials. When these are ready we will ask a number of restaurants to participate in a pilot program and let us know how it works. |
