As is all too often the case with what was once considered “peasant
food,” finding the tools to make a filled pasta from scratch — even
one that used to be filled with brains, eyeballs, hearts, tongues and livers
— is now a surprisingly expensive yuppie enterprise.
It took us
years
to build the family inventory of ravioli molds, cutting wheels, tiny rolling
pins, pasta cranks, etc., that make Ravioli Day fun and efficient. And by
“efficient,” I mean that Ravioli Day becomes low-maintenance enough
that you’re doing what’s really important — talking to your
family while you work. These days, you
can find most of these supplies through online dealers — or at one of the
more expensive (of
course)
kitchen-gizmo places in town: Sur La Table.
