Surfaces with a continuous plane - such as grates
across a gas cooktop - allow pots to slide to any point on the stovetop and give
cooks a versatile relationship to the actual heat source, in that pots can be
placed to one side of a burner for gentle
cooking.
When evaluating cooktops, notice
the placement of controls. Those at the rear may provide an edge of child
safety, but that benefit may be undercut by the additional risk of burn to an
adult reaching over a heat source to turn the controls on and off. Experts
generally agree that controls to one side or to the front are best.
Some cooktops permit switching modules
– e.g. griddle, grill, wok.
