My convection oven does not have
a third element and I love mine. The theory behind convec bake is to keep the
hot air circulating around the food so everything in the oven cooks/bakes
evenly.
When I was shopping for a new
range I too was overwhelmed with all the choices that are out there but when it
came to the convection oven and deciding if that third element was a
must-have...I just really didn't see the difference or advantage to having that
thrid element. The fan is what makes a oven a convection chamber. You could have
five elements in there but the fan is what counts.
I use the convect feature to
bake three sheets of cookies on multiple racks all at once and they all bake
evenly. I also use to when roasting. When using convection feature you want to
make sure your food items are in shallow pans so the air can circulate freely.
For instance you wouldn't want to bake a lasagna in a traditional lasagna pan
(deep sides) and use the convection feature as you wouldn't be gaining much if
anything because of the depth of the pan.
