- 2 cups couscous
- 2 lemons, juiced
- 1 tablespoon oil, extra virgin, (optional)
- 1 cup basil, fresh, finely chopped
- 1 cup mint leaves, finely chopped
- ¼ cup parsley, finely chopped
- 1 ¼ cups mozzarella cheese, cubed
- 2 small onion, chopped
- 2 medium tomato, cubed
- 1 small cucumber, peeled,seeded,cubed
- 1 bell peppers, yellow, cubed
- 1 cup olives, black, diced
- 1 pepper, hot chilli, diced
- salt

Directions
1. Put Couscous into a large mixing bowl.
2. Add the lemon juice and the olive oil. Stir well. Add pepper to taste. Optional: if Couscous seems to dry, add 1/4 to 1/2 cup hot, boiling water.
3. Cut, chopp and mince the other ingredients, salt tomato and cucumber slightly.
4. Add ingredients (herbs second last and the Mozzarella last), mix well after adding each ingredient.
5. Add pepper/salt if needed.
