I am asked how to make some of my favorite dishes so often, I decided to create this page so everyone can get the information in one place.
- Raw Apple Pie. I use this recipe but I make a different crust with 2 cups of walnuts and 8 dates blended in a food processor. This crust is really rich and delicious.
- Mock Tuna Salad. Soak 1/2 cup almonds for 12 to 48 hours. Soak 1/2 cup sunflower seeds 5 to 8 hours. Blend with 1/4 cup water, 2 tsp. Braggs Aminos, 1/4 cup lemon juice, 1 clove garlic, 1/2 tsp kelp and 1/2 tsp dulse. Add 1/2 cup tahini and mix thoroughly. Then add chopped onions and chopped celery. I got this recipe from Dorleen Tang at a potluck of the San Francisco Living Foods Support Group.
- Falafel. Combine 1 1/2 cups sprouted chickpeas (garbanzo beans), 1 cup sprouted sunflower seeds, 1 tablespoon minced garlic, 2 cups fresh cilantro chopped, 1/2 cup tahini, 1/4 cup Nama Shoyu, 1/2 cup fresh-squeezed lemon juice, 1/2 cup olive oil, 1 1/2 teaspoons Curry Chutney, 1 1/2 teaspoons cumin, 2 teaspoons sun-dried lime. Blend and form into patties and dehydrate for 8 hours at 90 degrees. I owe this recipe to Juliano's wonderful recipe book, Raw: the Uncook Book. I made a few minor changes. Juliano's recipe includes 1/2 cup chopped onion and 2 tablespoons fresh parsley which I omit. Also, Juliano tells us to put the patties on an oiled mesh dehydrator sheet. I found this messy. Instead, I put them on an oiled teflon sheet for 4 hours and then flip them onto the mesh sheets for the second 4 hours. - Curry Chutney. Equal parts yellow or golden curry and sun-dried lime
- Mexican Chutney. Equal parts black cumin and sun-dried lime
- Sun Dried Lime. This wonderful spice can be obtained from Foods of India, 121 Lexington Avenue, New York, NY 10016, telephone 683-4419. This information as well as the two chutney recipes are courtesy of Juliano's book. The limes must be ground up in a coffee grinder to use.
- Raw Sprouted Humus. Also from Juliano's book, this delicious dish is a perfect companion to the falafel. Blend 2 cups sprouted chickpeas (garbanzo beans), 1/4 cup black olives, 1/4 cup fresh-squeezed lemon juice, 1/2 teaspoon minced jalapeño, 1 tablespoon minced garlic, 1/4 cup tahini, 1/4 cup olive oil, 1 teaspoon Mexican Spice Chutney and 1/4 cup Nama Shoyu. Juliano also includes fresh parsley but I leave it out.
- Parsley Soup. Juice a bunch of parsley, 3 stalks of celery, fresh marjarom and fresh thyme, 5 tomatoes, three lemons. Mix in 3/4 cup honey. Add 1/3 cup chopped nuts and 5 fresh water chestnuts. This recipe comes from a book called Cook-Less Recipes by Shirley A. Boie.
- Raw Pasta Sauce. Blend 1 cup sun-dried tomatoes that have been soaked in water for 2 hours. (If using tomatoes packed in oil, don't soak and eliminate olive oil from recipe.) 1 cup fresh chopped tomatoes, 1/2 cup fresh basil leaves, 2 tsp Nama Shoyu, 3 cloves garlic, 1/4 cup pine nuts (optional), 1/4 cup olive oil, 1/4 cup water (if using tomatoes soaked in water, use the soak water) added a little at a time. Serve over raw pasta made from raw zucchini made into pasta with a spiral slicer. This recipe comes from Raw Kids by Cheryl Stoycoff.
- Raw Tabouli.
Chop up cilantro, parsley, green onions, avocados and tomatoes in a bowl. Blend almonds to a fine flour in blender and add to bowl. Add the juice of half a lemon, a tablespoon of olive oil, a tablespoon of honey, and a teaspoon of salt. Change it up each time by adding a different vegetable/herb like corn, broccoli, or fresh basil, or a different spice like Italian or Mexican seasonings.
