Here's a very tasty Dal recipe, one of my favourites.
This dal has a very meaty taste. It goes well with a variety of Indian dishes.
Ingredients
250g Chana Dal
1.25 litres water
½ teaspoon Turmeric
2 slices of root ginger
½ teaspoon salt
½ teaspoon Garam Masala
3 tablespoons Ghee
½ teaspoon whole Cumin Seeds
2 cloves garlic peeled and finely chopped
½ teaspoon dried Chilli
Method
Although not always necessary, I prefer to soak the dal for a couple of hours or so before cooking. Then put the dal into a heavy saucepan with the water and bring to the boil.
Add the turmeric and ginger. Cover, allowing the steam to escape, and simmer for one and a half hours or so until the dal is tender. You may find it could take longer, especially if you have not soaked the dal. Stir regularly during the final half hour or so to prevent sticking.
Add the salt and garam masala to the dal and stir in well.
The final stage, which makes the difference, is this. Heat the ghee in a small saucepan, when hot add the cumin seeds. After a few seconds add the chopped garlic and fry on a medium heat until the garlic lightly browns. Add the chilli powder and quickly stir it in, then immediately add the ghee and spices to the dal. Stir in well.
