Fourth of July

Like many people, we had company over on the
Fourth. We had perfect weather and no mosquitos (don't know why that happened).
I grilled flank steak and cherry tomatoes and Ena and I made an Italian potato
salad (no mayo or hard boiled egg).
For the steak, I took a half a bunch of Parsley,
some Basil and Mint, two large shallots, 6 cloves of garlic, the juice and zest
of a lemon, some kosher salt, some Cayenne and a lot of cracked black pepper
and put the whole lot in a food processor. I pureed the mixture then started
adding in olive oil until it came together as a pesto. It was quite spicy with
Cayenne and pepper but the Mint and Basil balanced things out. I pricked the
steak all over and run 1/2 the pesto on the meat. I let the meat marinate all
day in the fridge. I grilled it until it was rare then let it stand, sliced it
thin and topped it with the rest of the pesto. It was hit and it was quite
simple.
On the side, I took 4 cups of cherry tomatoes (they have been quit nice) and washed them then tossed them in a bit of olive oil. I put them on the grill directly above the coals for about 5 minutes until the were hot, softened and charred on one side. They made a great side. I used the leftovers for pasta.
I really enjoy dinners with friends. Something about coming together at the house and getting the table set and dinner together then eating and chatting. Cooking and sharing. It is a simple but great pleasure.
