Ingredients

  • 1 can pinapple, chunks or slices
  • ¾ cup sugar
  • ½ cup cider vinegar
  • 2 tablespoons cornstarch
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • 1 teaspoon vegetable bouillon
  • 1 green bell pepper
  • 3 cups broccolli
  • 2 cups carrots, sliced thin

Directions

Over medium heat, pour juice from the can of pineapple into a large skillet. Add sugar, vinegar, cornstarch, soy sauce, ginger and bouillon. Mix and heat stirring with a whisk to blend cornstarch so there are no big lumps.

When sauce has thickened, add the pineapple from the can and (if desired) sliced bell pepper.

Steam-fry the broccoli and carrots in another skillet.

Serve sauce over steamed rice & veggies. Can add tofu, if desired.

Super yummy!

This recipe is a 2 star - because my family is not used to sweet & sour sauces, but I'm going to keep making it because I think it will grow on them and I LOVE IT!
