Ingredients
- 1 small onion, chopped
- 2 medium cloves of garlic , minced
- 1 medium red bell pepper, chopped fine
- 2 15 oz. cans white beans, undrained, I use 1 butter bean, and 1 cannellini
- 1 15 oz. can garbanzo beans, drained
- 1 cup white corn, frozen or fresh
- 1 4 oz. can diced green chilies
- ½ teaspoon ground cumin
- 1 teaspoon chili powder
- 1 cup vegetable broth
- 2 Tablespoons lime juice, plus more for garnish
- garnish with:
- sliced avocado
- cilantro
- lime wedges
- black olives
- sour cream
- baked tortilla chips, (I like to put corn tortillas in the toaster and then tear them up and place in my own bowl of soup)

My daughter just claimed this as her "favorite mexican dish." It is a yummy combination of tender beans and spices mixed with fresh flavors like cilantro and lime. If you happen to have some leftover corn on the cob, try slicing it off the cob and using it as a garnish for even more freshness, adding a cool crispness to the mild chili flavor.
In a medium sized crock pot, add all ingredients and turn on high for 4 hours.
Top with desired toppings. Fresh lime wedges and cilantro are a must!! Delicious!!
