Ingredients

  • cup shallot, chopped/minced
  • 1 clove garlic , minced
  • 1 tablespoon water
  • ½ cup vegetable broth
  • ¼ cup fresh basil, chopped
  • 3 ½ teaspoons sugar
  • ½ teaspoon black pepper, freshly ground
  • ¾ teaspoon salt
  • 4 Roma tomatoes, chopped
  • 2 14 oz. can diced tomatoes
  • 1 cup soy or rice milk

Directions

Put shallots, garlic & water in glass bowl & cover. Microwave for 3 minutes. Add the next 5 ingredients to glass bowl and microwave uncovered for 5 minutes.

Blend diced Roma tomatoes, canned tomatoes, and rice/soy milk with immersion blender or regular blender. Pour in a medium size pot. Add microwaved mixture and simmer for 10-15 min.

Top with croutons & soy parmesan.
