- favorite all purpose seasoning, ie. Spike or Lawrey's

Directions
Spray a non-stick skillet lightly with non-stick spray. Place a corn tortilla in the skillet. Put about 1/4 cup of mashed potatoes on one side of the tortilla, flatten potatoes with a fork and sprinkle with a little seasoning. Fold the other half of the tortilla over and continue to grill until golden on one side, then flip and cook until golden on the other side.
Serve with rice, beans & salad if desired.
