Ingredients

  • 2 cups Basmati Rice
  • 3 cups water
  • 3 limes
  • 1 ½ teaspoons salt
  • 6 teaspoons cilantro, chopped

Directions

In a 2 quart heavy saucepan, heat rice and juice of 3 limes over low heat, stir for about 2 minutes. Add rice, water and salt to rice cooker and press start!
When done, add the chopped cilantro. Serve with black beans, in your favorite low-fat tortilla. Garnish if desired with tofu sour cream, guacamole (if not on MWL) and fresh salsa.
