Ingredients

  • 1 cup finely ground walnuts
  • ½ cup brown sugar
  • ½ cup white sugar
  • cup applesauce
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 ¼ cups unbleached white flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup dried cranberries
  • **VARIATION**
  • 2 cups finely ground walnuts

  • 1 cup whole wheat flour

  • 2 ¼ cups regular or quick oats
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 1 cup chocolate chips

Directions

Preheat oven to 350 degrees.

Combine the first 5 ingredients in a large bowl. Mix the flours, baking soda and salt in another bowl. Add dry ingredients to the wet ingredients and mix together until it becomes a smooth brown dough. Add cranberries and mix well. Drop by spoonfuls onto non-stick baking sheets. Bake for 9 minutes, convection, and remove immediately.

Hints: Substitute raisins, dried blueberries, or chocolate chips for the cranberries, if you wish. To grind the almonds/walnuts, just place them in a food processor and process until they are very finely ground. Trader Joe’s sells finely ground almond/walnut meal that would also work in this recipe. Walnuts and walnut meal should be stored in the freezer to keep them fresh until using.

If you don’t have a convection oven, the baking time will be a bit longer, probably about 12 minutes.


VARIATION:

The second list of ingredients is a variation of this cookie. I love oats in cookies, so the second one contains oats...and of course chocolate chips - which my kids prefer to the dried cranberries and I also doubled the recipe in the variation.
You have to try these, they will fool everyone into thinking they have butter in them! I have to call these something else, I altered the recipe, so Im allowed, right? I'm renaming the variation...Oatmeal Chocolate Chip Love.

Okay, with the chocolate chips they are not McDougall, unless you use vegan chips and don't eat very many. These are a real treat for me - but a staple for my kids. I'm just so glad to have found a recipe that tastes rich, but has no butter or oil. Yipee!!
