Ingredients
- 1 cup whole wheat flour, (can substitute 1/2 cup almond meal for 1/2 cup of the flour - for richer flavor)
- 1 ½ cups quick oats
- ½ cup brown sugar
- ½ teaspoon salt
- 1 teaspoon baking soda
- ½ cup unsweetened applesauce
- ¼ cup sugar
- 1 teaspoon vanilla extract
- ½ cup golden raisins, OR
- ½ cup chocolate chips, (but then they aren't fat-free anymore!

Okay, so fat-free cookies? Everyone has their own philosophy. Mine is, I'd rather pick a day and feast on some really rich cookies made with unhealthy ingredients. But if you must, here is a cookie that is just okay - Cookies are a really hard food to fool people with. Cakes, puddings, pies, those are easier - but being the cookie fanatic that I am, these just don't hack it for me. Unless of course you don't know what REAL cookies taste like, or it's been a LONG time since you had one. I would much rather make a chocolate banana smoothie, or banana bread, or Chocolate Love Pudding to get my sweet fix - or here's an idea: a piece of really yummy fruit. HA!
1. Combine the flour, oats, sugar, baking soda and salt; stir to mix well.
2. Add applesauce, agave syrup, vanilla extract, and raisins, stirring well to mix. (if dough seems crumbly, keep stirring until it holds together.).
3. Coat a baking sheet with nonstick cooking spray or line with wax paper.
4. Drop rounded teaspoonful of dough onto sheet about 1 1/2 inches apart.
5. Slightly flatten each cookie with tip of spoon.
6. Bake at 350 degrees for about 9 mins, or until golden brown.
7. Cool on baking sheet for 1 minute.
8. Transfer cookies to wire racks and cool completely.
* You can use craisins or even chocolate chips for the kids! Only one of my kid likes these with golden raisins.
* I was thinking about adding a little peanut butter for the kids' cookies too-as an option!
*Sometimes I have to add a little soy or rice milk if the batter is too dry, once it's mixed.
