- 2 cups whole wheat flour
- 1 ¾ cups white flour
- ½ cup sugar
- ⅓ cup baking powder
- 2 ¼ teaspoons salt
- 4 cups soy or rice milk, reduced fat ( I dilute my soymilk with 1/2 water)
- 1 tablespoon egg replacer

Directions
These are so AMAZING! You can't believe they are fat free let alone vegan!
1. In large bowl, mix flour, sugar, baking powder, egg replacer, and salt. Add rice milk and stir just until flour is moistened. Let the batter rest for 5 minutes while skillet heats, then stir gently one more time before using.
2. Heat non-stick griddle or skillet (sprayed lightly with non-stick spray) over medium heat until drop of water sizzles. Pour batter by scant 1/4 cupfuls onto hot griddle. Cook until tops are bubbly and bubbles burst; edges will look dry. Then flip once and cook until undersides are golden.
3. Serve pancakes with syrup, jam, or other topping as desired.
For use as waffles, cook them in your waffle iron. Lay them on a cooling rack when done. Right before serving, pop them in the toaster for extra crispness, other wise they are not very crispy. But they are perfect after a quick pop in the toaster!
