Ingredients

  • 1 can kidney beans, drained
  • 1 can chili beans, undrained
  • 2 cups frozen corn
  • 2 tablespoons taco seaoning, (your favorite kind)
  • 10 corn tortillas
  • lettuce, shredded
  • tomatoes, diced
  • avocado, (optional)
  • tofu sour cream
  • soy cheese, (if desired)

Directions

Drain & rinse beans. Put beans, corn, & seasoning in pot and cook until corn is heated through.

Crisp up tortillas in a non-stick skillet, can use a little non-stick spray if your pan isn't that great.

Fill with desired toppings!

* Can substitute other whole beans of your choice if you don't like kidneys. (Black or Pinto)
