Preheat oven to 325 degrees and prepare two loaf pans.

In food processor, chop cranberries, then remove to another bowl.
In food processor, mix dry ingredients and then cut in butter.
Blend eggs and orange juice (add orange zest if using fresh oranges) in a large bowl. Add flour mixture. Fold in cranberries.

Bake 60-70 minutes, until a toothpick comes out clean.
Wrap in plastic wrap while still slightly warm.
