Mix all marinade ingredients (can be done up to 8 hours ahead).
Put fish in a shallow baking dish and add marinade. Refrigerate for 15-30 minutes.
Heat a grill to medium-hot (or preheat oven to 425 degrees).
(If baking in the oven, cook 10 minutes for each inch of thickness.
Oil the grill, or use a piece of oiled foil. Place the fish skin side down on the grill/foil. Close the grill and cook for 8 minutes without opening the lid. If the fish does not flake, then close the lid and cook for two minutes more. When the fish is done, serve at once.
Notes: Serve sprinkled with sea salt and with lemon wedges.
