1. Simmer chicken in olive oil and season with salt and pepper.
2. Add mushrooms and scallions.
3. In a separate saucepan, melt the butter and whisk in the flour. Cook to form roux. Slowly whisk in milk.
4. When hot throughout, sprinkle in cheese to melt.
5. Add chicken mixture. Cool and refrigerate 4 hours.
6. Preheat oven to 400 degrees.
7. Place approximately 1 1/2 Tbsp. of chicken mixture in the center of each puff pastry square. Fold up and pinch corners and bake 20 minutes.

Notes: Red potatoes, steamed and sliced, can be substituted for the mushrooms.
