Preheat oven to 350 degrees.
1. Brown meat in skillet, add spices and 2 1/2 cups tomato sauce. Simmer 10 minutes.
2. Combine ricotta & sour cream.
3. Mix grated cheeses together.
4. place a layer of tomato sauce in a 9x13 glass baking dish. Layer noodles, ricotta mixture, meat mixture, and then grated cheeses in three layers. Top with parmesan and sprinkled herbs.
5. Bake 30 minutes covered with foil, then 15 minutes more uncovered. Let set 15 minutes before cutting.
Can be made ahead and then baked.
