1. Preheat oven to 375 degrees. Prepare 6 muffin cups.
2. Whisk together bananas, sugar, egg, vanilla and 1/2 cup coconut until well combined.
3. Gently fold in flour/salt/baking powder until just moistened.
4. Divide batter among muffin cups and sprinkle with remaining coconut.
5. Bake until puffed and golden, about 25 minutes.
