1. Melt the butter and add the flour. Cook over moderate heat 2-3 minutes, stirring constantly.
2. Gradually add the milk, stirring with a whisk. Cook about 3 minutes, until the sauce has thickened.
3. Add spices and all but 2 Tablespoons gorgonzola. Stir until the cheese has melted.
4. Toss with cooked pasta of your choice. Top with remaining cheese.
