1. Make spiced pecans by preheating oven to 325 degrees. Combine honey, spices and stir in pecans. Place in a single layer on a baking sheet (with Silpat) And sprinkle with sugar. Bake 16-18 minutes. Cool.
2. Whisk together juice concentrate, oil, vinegar and salt in a small bowl.
3. Combine apples and cranberries in a shallow 2-quart dish. Pour juice mixture and refrigerate, covered, between 3 and 24 hours. Stir occasionally. Let stand 30 minutes at room temperature before using.
4. When ready to serve, toss spinach and celery. Plate, then top with fruit mixture and sprinkle with pecans.
