1. Chop the cucumbers into 1/2 inch slices and combine with the halved tomatoes, onions, and mint.
2. Sprinkle with sea salt and pepper just before serving. Drizzle with olive oil and sprinkle on the lemon juice. Toss to coat.
3. Top with crumbled feta and serve.
