1. Heat the apple juice to boiling and plump the raisins in the juice for 30 minutes.
2. Grate the carrot and apple, blot to remove excess moisture.
3. Remove raisins from the juice (save) and add them to the carrot mixture.
4. Whisk together the honey, vinegar, spices and 2 tsp of the reserved apple juice.
5. Toss dressing with salad.
