Preheat oven to 350 degrees.
Combine dry ingredients.
Combine oil, sugar, honey, eggs and vanilla. Beat into dry ingredients until smooth. Fold in nuts.
Chill in the freezer, covered, 1-2 hours.
On separate sheets, form two logs about 3" wide and 1" high.
Bake 20 minutes until springy.
Cut into 1/2-inch slices and lay on sides. Bake 5 minutes, turn and bake 5 minutes more. When removing from oven, sprinkle with sugar.
Cool completely,
Melt chocolate and spread onto bottom of biscotti.
